Dizi or Abgoosh, literally translated to Water Meat, is traditional Persian potato bean and lamb stew.
Abgoosht is one of the delicious and traditional Iranian dishes that is cooked differently in different regions, even in each house. Its main ingredients are meat and legumes. In this blog, Wonderful Iran Tour explain how to prepare this delicious and nutritious food.
Ingredients: lamb with fat, chickpeas, onions, white beans, tomatoes, potatoes, Omani lemon (dried limes), salt, pepper, cinnamon, turmeric
How to prepare: put lamb and meat fat, onion (garlic if you like), sliced tomatoes and pre-soaked chickpeas and beans with turmeric and pepper in a pot (it will be much tastier if it cooks in a stone pot), inside Pour water into the container to cover the ingredients. Let it simmer well for 3 hours. During cooking, check it several times and if the water is low, add boiled water to it. After 3 hours, add the potatoes, tomato paste, Omani lemon that we have pierced with a fork, salt and cinnamon and let it cook for another 1 hour.
Now our broth is ready. This food is eaten in the form of broth and mashed. Wonderful Iran Tour suggests that it be served with vegetables, raw onions, pickles, Doogh (Persian drink made with yogurt) and Sangak bread.
